These days, the meat department of Corralitos Market & Sausage Company is almost one-of-a-kind. How so? It’s an old-world style honest-to-goodness real butcher shop. There are not many left in Santa Cruz County. In the trade, the butchers perform what’s referred to as “breaking down the carcass” which is almost a lost art form. Pre-package meat will not be found on the premises.
All products are fresh such as the beautiful California certified-angus choice beef from Harris Ranch; Mary’s all-natural organic chicken; and all natural sustainable lamb and pork.

The market’s butchers take a lot of pride in their work while creating their own cuts. You will not find the same quality cuts of meats in the chain markets or big box stores. We guarantee it!
- Beef cuts: typically you’ll find top round, London broil, top sirloin plus porterhouse, T-bone, New York and ribeye steaks; also chuck roast, stew meat, brisket, plus skirt steaks, tri-tips and short ribs for barbecuing. Oh, and crowd-favorites ground beef and ground chuck too.
- Pork cuts: the typical cuts are hams, meat for pulled pork, pork belly, pork chops — bone-in and boneless — sausages, bacon and the very popular chili verde.
- Lamb cuts: the typical cuts are leg of lamb, shoulder chops, rib-lets, lamb shank and neck.

The butcher shop does a lot of of custom butchering and processing — January through August only — for customers who bring in a variety of carcasses, animals they’ve either raised, hunted or caught while fishing. Customers appreciate the butchers’ expertise as they’ll, perform custom cutting and wrapping, along with smoking products (hams, sausages and bacon). You name it the butchers will do it for ya!
“We’ve seen it all says,” butcher shop manager Dave Peterson. “People bring in all kinds of game such as moose, elk, deer, wild pigs caribou, plus animals they’ve raised such as cows, goats, musk ox, buffalo and domestic pigs. Fishing season, we’ll be busy smoking and custom cutting salmon, albacore, yellowfin tuna and more.
Old-World Customer Care
If you need a custom order, say 20 ducks or rabbits or prime rib for 30, simply call the butcher shop to place your order, and the guys will be happy to handle all the details for you. When it comes to everyday orders, if you need your your product special-cut a certain way — sliced thin, butterflied, skinned or de-boned —please don’t hesitate to ask.
